Packed Lunch Ideas (that require no microwaving)

This week I plan to take:

  • celery with hummus
  • lettuce wraps with turkey/cheese/mayo (I pack the lettuce separately)

  1. My current favorite lunch is cottage cheese, frozen blueberries (which are thawed by lunch time), and walnuts. If you don't like cottage cheese, maybe plain greek yogurt? Jonathan likes to mix plain greek yogurt and peanutbutter with a touch of honey as an apple dip for his lunch.

  2. Currently - I take pepper slices, a sliced carrot, sandwich meat, apple; I make a half sandwich with low carb bread (fat is the mayo) I may steal your lettuce roll up idea!
    When we did the zone all those years ago: can of green beans, chicken chunks (I'd bake chicken in that cooker thing Mom got all of us, skinless, seasoned with herbs), put some Italian salad dressing on it (now I'd probably just use olive oil or make my own since I'm more of a label reader now)
    Sometimes I take my same old same old lunch meat and then spread some sort of something on them (we have a bottle of sriracha ranch, a little dab will do ya), add a bit of cheese and roll them up. Somehow because they are rolled, it is more fun.
    Yogurt and fruit! I did that for awhile but then all of the containers were stressing me out. I did find I'd rather buy a large container of plain and then add the sugar that I want to add. This is back to that more of a label reader now and not liking what I read on non-fat products.
    Oh - get a thermos! Hugh has one and he said food was still warm those hours later. This seemed remarkable to me, but then I recall Leslie's hot water that we used to wash / scald Mom's feet that long ago hospital fiasco: Maundy Thursday = let's do a feet washing. I need to try this one too!
    Lunches sure can be routine especially when you don't want to walk to the school microwave that is probably like ours and so slow (and no one cleans)

  3. Helen's post reminds me that I used to take soup in a thermos on my 12-hour road trips to the seminary. Ours is stainless steel and my meal was the perfect temperature by the time I ate it. I find soup very satisfying.

  4. This past week I made a lettuce wrap with leftover sauerkraut and turkey sausage (gross? nah!). I ate it cold and it was very satisfying. This afternoon I made some broccoli & cauliflower with cheese sauce I plan to portion out cold left overs of it this week. Not exactly low calorie but very satisfying.

    Confessions:I over ate boneless garlic chicken wings last Friday. We ate late that nighg and I was famished! Another night I was eating diner by 4:45 because I hadn't eaten enough lunch that day - I was a hot mess!
